About The Author

Dr. Gutschall, the course author, is an associate professor of nutrition and foods, and the head of the nutrition graduate program at Appalachian State University. She has been teaching nutrition at both undergraduate and graduate levels for 12 years and was the director of the Didactic Program in Dietetics for 5 years. As a registered dietician for 17 years, Dr. Gutschall, continues to practice clinically, providing nutritional care for children with special needs. She has published several papers and presentations in this area, including at national, regional, and state-level forums.
